Easy Fuji Apple Salad Like Panera {Dairy-Free}





The other day I splurged on a Fuji Apple Chicken Salad at Panera while the kids were at a friend's house. And the whole time I was thinking, "I just have to make this for my food allergy son. He would love it!"

And besides, why do I think only a restaurant can make delicious salads? I can save mucho money by making these at home, and the whole family can happily partake together. Bonus.

So over the week, I shopped for ingredients and researched dressing recipes. And this is what I came up with for our own simple, dairy-free, fuji apple salad experience.  

Since my son has nut allergies, he used Enjoy Life Fruit & Seed Mix Beach Bash instead of the pecans and sunflower seeds. The seed mix has safe sunflower and pumpkin seeds for a nice crunch and some additional dried fruits that work great in this salad.  

Adding in some leftover roasted chicken makes this a full meal, and feta cheese is another idea for those NOT dairy-free.   




EASY FUJI APPLE SALAD DRESSING
1/4 cup mayonnaise or vegan mayonnaise or dairy-free yogurt
3 Tablespoons of apple juice
1 Tablespoon of apple cider vinegar
1 Tablespoon of maple syrup or sugar

Whisk 4 ingredients until blended well.  Store in refrigerator for up to a week.

Baby Romaine Lettuce 
Dried Apples
Cranberries
Sunflower Seeds 
Pecans
