Homemade Apple Pie {Dairy-Free}

Fruit pie is Jeff's very favorite, and this is the apple pie recipe that he grew up with.  Lucky for us, it just so happens to be dairy-free!  

I'm not a huge pie person so I have yet to perfect making the crust look pretty. However, it always ends up tasty, and that's what counts.  I'm sure Jeff would suggest that I just keep on practicing because he would eat one of these every week.

Time: 50-60 min

Pie Dough for Two Crust 9" Pie
2 cups flour
1 tsp. salt
2/3 cup crisco + 2 Tbs
1/4 cup water
Measure flour into bowl and mix salt through it
Cut in shortening until shortening particles are size of small peas.  I use my Kitchen Aid mixer.

Sprinkle with water, a Tbsp at a time...mixing lightly until all the flour is moistened
Gather dough together with fingers so it cleans the bowl
Press firmly into a ball
Then roll out
Divide dough in half
Rolling pin and pastry board should be covered in flour
Roll lightly, being careful to not add extra flour as that makes pastry tough
Roll until size of pan
You can always pinch back together when it falls apart, or start over
Fold in half and place in pan
Try not to spend too much time working it or that can make it tough too

Apple Filling
Mix 3/4 to 1 cup sugar with 1 tsp. cinnamon or nutmeg
Mix through 6-7 cups of sliced apples
Put in pie pan and dot with 1 1/2  Tbsp of dairy-free margarine
Put on top pie shell and cut slits in the top
Seal the pie shells together
Bake until crust is nicely browned and apples are cooked through
