Hearty Oat Waffles {Dairy-Free}

It's our family tradition...

Jeff makes the kids waffles on Saturday morning, and I sleep in.  There's no shame in my game.  

We use a hearty oat waffle recipe that includes eggs.  But if you want to make a simpler recipe that uses no egg or milk, try this simple waffle recipe free of egg and milk that we used back in the day.

1 1/4 cups flour
3/4 cups quick oats
1/4 cup brown sugar
2 tbs baking powder
1 tsp cinnamon
pinch of sea salt
2 eggs
1 1/2 cup dairy-free milk
1/4 cup dairy-free margarine melted
1/4 cup canola or coconut oil
maple syrup or fruit toppings

Preheat waffle iron.

Whisk flour with oats, sugar, baking powder, cinnamon and salt in medium bowl.  In another medium bowl, whisk eggs.  Add milk, butter, and oil to eggs.

Stir wet ingredients into dry ingredients gently until combined.  Lumps are ok. 

Pour 1/3 cup of batter per waffle and cook until outside is crisp and inside is cooked through.  
Top with dairy-free butter and maple syrup or fruit.
