Chocolate Chip Cookie Dough Truffles {Dairy-Free & Egg-Free}

Last Christmas was all about the Cake Balls. And the year before that was the Oreo Truffle.  
But this year, the boys voted for Chocolate Chip Cookie Dough Truffles.  

I knew this would be easy-peasy because we have the egg-free cookie dough down, and we've also mastered covering just about anything in melted, dairy-free chocolate. So all we had to do was combine the two.


We made cookie dough balls using our chocolate chip cookie dough recipe. Don't use egg because you aren't baking the batter. Either use the flax eggs or just leave out the egg replacer all together. I like to use the flax egg.  

Roll the dough into 1" balls. I like to use my melon baller for this.  

Flash freeze the balls so they will be easy to handle when dipping in the chocolate.

Melt 1/2 cup Enjoy Life chips over low to medium heat on the stove. It's optional to thin the chocolate with 1 Tbs. coconut oil. Do not overheat as it will scorch. Do not allow water to get into the mixture or it will clump. Continuously stir the mixture just until melted. Take off heat.  
Dip the dough balls into the melted chocolate. I prefer to leave the bottom dough exposed. Less mess this way. Place onto wax paper on a cookie sheet. Place balls into freezer to set the chocolate. 

Store truffles in an airtight container. Can be refrigerated or frozen.
