Cake Balls {Dairy-Free & Egg-Free}

Original Post:  12/29/14

Merry Christmas to us...we finally made cake balls! Oh goodness, we spent the whole day experimenting with sprinkles and chocolate and white chocolate. These came out the best...Enjoy Life chocolate with Pillsbury sprinkles from on top of the icing container. Aren't they adorbs?

I considered making these into pops on sticks, but I'm just too practical for that. All I could imagine was cake balls falling all over Grandma's carpet on Christmas. So we opted for finger food instead, and nobody complained.

This recipe made many cake balls so we are able to freeze some for upcoming birthday parties!

{dairy-free & egg-free}

We made our cake balls chocolate using our chocolate cake recipe. Bake the cake and let it cool. Then literally tear the cake apart and mix it with a 1/2 a container of Pillsbury frosting that's labeled dairy-free.

Melt 1/2 cup Enjoy Life chips in the microwave or on the stove. It's optional to thin the chocolate with 1 Tbs. coconut oil.

Roll the cake and icing mixture into 1" inch balls. Coat the cake balls in melted chocolate. Place onto wax paper on a cookie sheet. Place balls into the freezer to set the chocolate.

Store the cake balls in an airtight container. Can be refrigerated or frozen.
