Enjoy Life Mountain Mambo Crunch

The boys and I are anxiously awaiting the arrival of my sister from Dallas today.  We are cleaning and baking and cooking, OH MY!  She has a very restricted diet, and I was hard-pressed to think of a gluten-free, quick treat to make before she got here.  That's when I remembered all the Enjoy Life products that I got last week using Ibotta rebates.  

We had never had the Enjoy Life Cereals before so I pulled them out and gave them a try.  The boys and I thought the Crunchy Flax with Chia was kinda bland, but the treat recipe on the back completely fit the bill for what we needed...something sweet and allergy/gluten free!

They call the treat "Mountain Mambo Crunch".  And this NO BAKE snack called for three Enjoy Life products that I had:  Mountain Mambo Seed & Fruit Mix, Crunchy Flax with Chia Cereal, and Semi-Sweet Chocolate Chips {affiliate, great prices on Amazon for the chips!}.

This recipe is so easy that the kiddos can definitely help.  I halved the recipe just to make sure we liked it and well, I have no doubt these will be gobbled up by the end of the day.  Next time, it's a full batch for sure!!!

1 package Enjoy Life Fruit & Seed Mix (sunflower seeds, pumpkin seeds, cranberries, raisins, dried apples, chocolate chips)

1 1/2 cup Enjoy Life Crunchy Flax with Chia Cereal (sorghum, flax, chia)

1 1/2 cup Enjoy Life Chocolate Chips/Chunks

1 1/2 teaspoon oil (we used coconut) 

In a bowl, combine seed/fruit mix and cereal.  Melt chocolate over stove or in microwave.  Add oil to thin it out.  Pour chocolate over the mixture and fully coat.  Spread out on wax paper and place in freezer until it sets.  Once solid, break into individual pieces.  Store in an airtight container in the freezer.
