Apple Tortilla Roll-Up's {Dairy-Free}

Oh my goodness gracious, I LOVE these! With our super terrific apple tree at the new house, I am on the look-out for new apple concoctions. I've made pie, crisp, cobbler, cookies...but these roll-up's beat them all in my opinion. And they are the easiest to make! These kind of remind me of McDonald's apple pies...if my memory serves me's been a long time since I've had one.

For not seasoning the apples, I can't believe how flavorful this turns out from just pouring the liquid over top. The bottom of the tortillas are soft and juicy. The tops of the tortillas are crunchy. Jeff says these would be especially good with ice cream or whip cream on top. I HIGHLY recommend you give these a try! 

I think I will start putting the boys in charge of making these for us, they are that easy.


4 small flour tortillas (I use wheat)
2 small apples sliced
1/4 cup sugar
2/3 cups water
4 Tbs. dairy-free butter
1/4 tsp. cinnamon

Place apples on tortillas, roll, and place in a baking dish. Boil sugar, water, butter and cinnamon on stove. Pour mixture over tortillas and bake at 350 degrees for 20 minutes, basting once. After pulling from oven, baste one more time and serve hot.

Oh nice! My son LOVES the McD's apple pies. They are a special treat for him. I'll have to try these homemade ones!

Super yum! I used rice tortillas and they came out awesome. Will definitely make again!

I'd noticed forever ago that my newest man wasn't tolerating milk so well, but we didn't see any improvement in his eczema when I cut back in my diet. RAST showed very low positives to egg and peanut. :( Hold me and tell me since it's low he'll outgrow it quickly. At this point, I'm just holding out hope he can do gluten.
