When we make whipped cream from canned coconut milk, we are always left with the runny part of the coconut milk. I used to throw it out (gasp), but now we have found a way to make good use of it.
The coconut water tastes great in a strawberry smoothie.
STRAWBERRY COCONUT SMOOTHIE
1 Cup Canned Coconut Milk (watery part, cold)
1 Cup Frozen Strawberries
1/2 Cup Ice Cubes
Splash of Vanilla
Honey (to taste)
Blend in a high power blender. Enjoy!
