Coconut Oil Stove Top Popcorn {Dairy-Free}

I just made up this batch of popcorn and bragged about it's yummy-ness on Facebook.  I should know better than to brag without a recipe posted.

So here is the super easy recipe for those asking.

And yes, this is over-the-top delicious popcorn.  I make it for company a lot, and it always impresses. It's not your normal tasting popcorn.  It's not heavy, soggy, or oily.  It's light, "buttery", and addicting!

For those of us dealing with dairy allergies, you will never wish you could pop buttery microwave popcorn again.  This beats it by miles!  

I remember this recipe by 3's.  1/3 cup popcorn, 3 Tb coconut oil, 3 test kernels, 30 seconds off heat. The 3 kernel test and the 30 second heat removal even out the temp of the oil and get most all of the kernels popped and at nearly the same time.  I usually have under a dozen kernels left when I pull off the lid.  

Coconut oil is prime for the amazing taste of this stove top popcorn.  What a healthy treat!

1/3 Cup Popcorn Kernels
3 Tb Coconut Oil
Sea Salt or Pink Himalayan Salt 
Coconut Sugar (optional)

Heat oil and 3 kernels in a large pot with lid on medium high heat.

When the 3 kernels pop, put the rest of the 1/3 cup kernels into the oil. 

Place lid on pan, give pan a little shake to coat all the kernels in oil, and remove from heat for 30 seconds. 

Return pot to burner, with lid.  

Listen for kernels to begin popping.  

Remove from heat when popping ends or slows significantly.  

Sprinkle with salt and coconut sugar.
