Mint Chocolate Chip Ice Cream {Dairy-Free}



I am completely giddy over this yummy treat!  It's low-carb and low-sugar for mama and dairy-free for the kiddos.  

One trick that I figured out recently with making homemade dairy-free ice cream is how to get it creamy again in following days (given that you ever have left overs).  Our left over ice cream tends to turn into a chunk of ice.  Still flavorful, but bad texture.  Today I just threw it into the mixer and mixed it up to a softer texture.  


DAIRY-FREE & LOW-SUGAR MINT CHOCOLATE CHIP ICE CREAM

1 Cup Silk Creamer
1/2 Cup Dairy-Free Milk 
1/2 Tsp Vanilla Extract
1/8 Cup Stevia
1/8 Cup Sugar
1/2 Tsp. Peppermint Extract
Pinch of Salt
Green Food Coloring
Dairy-Free Chocolate Chips


Mix ingredients, except chocolate chips, together and then pour into your ice cream maker according to its directions.  We use a Sunbeam Gel Ice Cream Maker. Ours churns ice cream in about 30 minutes, not bad!  

Add chocolate chips when ice cream is done in ice cream maker.
