No-Bake Pumpkin Oat Bites {Dairy-Free}

We recently made these Pumpkin Oatmeal Cookies from Chocolate Covered Katie.  I used maple syrup for the sweetener.

I always like to make balled treats by using my Pampered Chef melon baller.  So convenient.

Guests at our house enjoyed this treat and asked for the recipe so I will take that as a good indication.  And I did add chocolate.  

Add chocolate in two ways:

1.  Drizzle melted Enjoy Life chocolate over these.  Add a little coconut oil to the melted chocolate to thin it out.  Coconut oil also allows it to harden nicely.

2.  Add dairy-free mini Enjoy Life chips to the batter.  I used 1/2 cup and skipped the topping drizzle in a later batch.  This was the quicker and easier method to get chocolate incorporated.
