Mini Peanut Butter Fudge Pies {Dairy-Free}

Ok, I changed my mind.  I do like making pie.  I like making creamy pies!  Fruit pies, not so much.

My first favorite thing about creamy pies is that they can take graham cracker crust.  Oh, this is so much easier than rolling out dough.

My second favorite thing about creamy pies is that many contain chocolate! 

So last night I tried Chocolate Covered Katie's Peanut Butter Pie recipe.  I like her low-sugar route although I substitute for her stevia suggestions.  I also like that she often does no-bake like she did in this peanut butter pie.

I put my own little twist on this and made mini-pies using a muffin tin.  I just scooped out one ice cream scoop full of chocolate graham cracker crust for each spot.  Then I pressed and rounded out each crust with the back of the ice cream scoop.  

I knew I wanted a chocolate crust for this peanut butter pie.  My first thought was that I needed chocolate cookies or graham crackers.  Then I realized a little cocoa powder would turn regular graham crackers into chocolate crust.  But cocoa powder is bitter so we'd need some sweetener too.  And we needed something wet to stick the crumbs together.  Honey fit the bill for both sweetener and something wet so I went with that.  I think it turned out great.  

1 Package of Graham Crackers (makes about 1 1/4 cup of crumbs)
1/4 Cup Cocoa Powder
1/3 Cup Honey

First I smash the graham crackers in a baggy.  Then I transfer the crumbs to my blender to pulse them into a fine, consistent powder.  

Then I fork the graham cracker crumbs into the cocoa and honey in a bowl by hand.  

Press the crust mixture into the bottom of each muffin tin spot.

I halved Katie's recipe and it made 9 mini pies.

I went with the coconut oil over using more peanut butter.

I also added 1 Tb of maple syrup for a sweetener.

I drizzled the top with a little Hershey syrup.
