Last night I wanted to make some vanilla ice cream to go with pie. But then I went a little crazy, made some chocolate chip cookie batter, and added it to the ice cream. At that point, who really cared about the pie?! We had chocolate chip cookie dough ice cream in the works!
For this recipe, it's best to make the ice cream and cookie dough separately, and then mix them together at the end.
Depending on how your ice cream machine works, the process can take as little as an hour total.
1 Cup So Delicious Creamer
1/2 Cup So Delicious Dairy-Free Milk
1.5 Tsp Vanilla
1/4 Cup Brown Sugar
Pinch of Salt
Mix the ingredients and add them to your ice cream machine according to the machine directions.
EGG-FREE COOKIE DOUGH
While the ice cream is churning, make the chocolate chip cookie dough. This is DOUBLE the amount that you will need for the ice cream just in case you want to make another batch of ice cream or want to make up some cookies later.
The dough is egg-free so it can be eaten raw in the ice cream. Add the flax egg if you want to bake some cookies from this dough.
1-1/8 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 cup/stick dairy-free buttery spread
3/4 cup brown sugar
1/2 tsp vanilla
1 flax egg (optional)
1 cup dairy-free chocolate chips
Beat butter, sugar, vanilla, and optional flax egg together. Add baking soda and salt. Then add flour. Stir in chocolate chips.
COOKIE DOUGH ICE CREAM
Once the ice cream and cookie dough are done, set both in the freezer for about 15 minutes to let them both harden up. Then remove and start putting dime to quarter sized chunks of dough into the ice cream. Combine the dough into the ice cream. You may need to freeze the cookie dough ice cream another 10 minutes before serving. Enjoy!
