Iced Pumpkin Spiced Latte with Instant Coffee {Dairy-Free}

I admit, I'm more of an iced mocha girl. But the peer pressure of spiced pumpkin everything this time of the year is too great, and I have to be a part of it somehow. I just found pumpkin spice chapstick at the store recently. Say what?!   

I'm all for eating and smelling spiced pumpkin. But wearing it? Has pumpkin spice gone too far?  

And while I don't love spending my money on fancy pumpkin drinks at Starbucks or Dunkin Donuts, I'm willing to make something quick at home on the cheap just to say I did the pumpkin thing. 

By making this Iced Pumpkin Latte at home, you can significantly cut the sugar and calories which is fantastic. Many may want to double the recipe, and it will still keep at 100 calories or less!  To cream up your latte, add a scoop of dairy-free ice cream or whipped cream. But I am not responsible for the added calories that will ensue.  ;)

Pumpkin Spiced Latte with Original Unsweetened Almond Milk, no pumpkin ~ 45 calories

Pumpkin Spiced Latte with Original Unsweetened Almond Milk & pumpkin ~ 50 calories

Pumpkin Spiced Latter with Skim Milk ~ add 10 more calories

Iced Pumpkin Spiced Latte

Heat 1/4 cup of water in the microwave

Add 1 tsp. of instant coffee & 1/8 tsp. of pumpkin pie spice.

Add 1 Tb. maple syrup

Whisk in or immersion blend in 1 Tb pumpkin puree (optional)

Add handful of ice cubes

You may want to transfer to a plastic cup before adding ice cubes 

The temperature change could break your glass

Add 4 ounces of milk

Oooh yes! I absolutely love this time of year and it's my mission to fill my belly with as much pumpkin goodness as possible!

I came up with a way to have it in my breakfast smoothie...
