Beef & Veggie Soup {Dairy-Free}

Since we are doing our end-of-the-month dinner scrounging this week (food allergy budgets are tight!), I thought I'd whip up our favorite vegetable soup with leftover steak, beef broth, and some frozen veggies.

This soup is also especially great for feeding guests. Throw ingredients in the crock pot for Halloween, Super Bowl, etc. Serve with some homemade bread, and you're set!

I make our own beef broth similarly to way I make chicken broth, but I use beef bones instead. Or Swanson's beef broth has been dairy-free in the past, check labels to make sure.


I just throw these ingredients into a pot on the stove or the crockpot:

2 cans or 4 cups beef broth
small can tomato sauce
can of diced tomatoes
cooked ground beef, diced steak, or stew meat
frozen or fresh veggies (corn, peas, green beans, carrots, etc)
diced potatoes
1/4 tsp dried basil
1/4 tsp dried thyme
1 bay leaf (if you have it)
salt to taste

ah yes. the mystery breakouts. we have those often. it is really confusing. my allergist wonders if there is some sort of mold or something that affects my son. we just had a wierd thing happen again in the allergy world.. here is my blog:

I've gotten to where I just make my own broth from chicken bones and then freeze it.

Thanks for letting me know what you use, though. That will be very helpful if I need something in a pinch! :)

Oh, also... you asked about paint. I used WASHABLE tempura paint. I got it at Hobby Lobby. It was the first time we had used it. I don't know much about paints as I usually tend to stray away from paint. LOL!
