Zucchini Brownies {Dairy-Free & Egg-Free}

Here's another fun way to use up your zucchini harvest...zucchini brownies!  Now that's one way to sneak in the veggies.  

These are moist and cake-like, and they taste especially rich with the frosting.  Do they taste like zucchini?  Nope!

If you prefer a gooey brownie, try these.

I adapted this recipe from an All Recipes.

Dairy-Free & Egg-Free Zucchini Brownies

Oven: 350

Dish:  9x9"

1/4 cup oil

3/4 cup sugar 
1 tsp vanilla
1 cup flour 
1/4 cup cocoa
3/4 tsp baking soda
1/2 tsp sea salt
1 cup shredded zucchini
1/4 cup dairy-free chocolate chips (optional)

Grease baking dish.  Mix together oil, sugar, and vanilla.  Combine flour, cocoa, baking soda, and salt.  Mix both the wet and dry ingredients together.  Fold in the zucchini and chips.

If batter is too dry, add 1 Tb of water at a time until brownie batter consistency...probably 1-2 Tb.

Bake 20-25 minutes until springs back to the touch.

Dairy-Free Brownie Frosting (optional)
3 Tb cocoa
1/8 cup dairy-free margarine
1 cup powder sugar.
1/8 cup dairy-free milk
1/4 tsp vanilla

Blend ingredients together and spread over cool brownies.
